Summer Feast
Cari's Killer BBQ Ribs
- 1 rack of pork baby back ribs
- 1 tbsp seasoning salt (your favorite)
- 6 garlic cloves, peeled
- 1 bottle microbrew beer (the darker the better)
- 1/2 cup BBQ sauce (any brand)
- 1 tbsp ground espresso beans
- 1 shallow baking pan
Place ribs in baking pan, bone side down. Rub seasoning salt into meat. Insert garlic cloves between every-other bone. Pour bottle of beer into pan. Cover with foil and bake in 350 degree oven for 30 to 45 minutes (until ribs are cooked through).
In the meantime, mix the BBQ sauce with ground espresso in a small sauce pan and heat.
Bring grill to medium heat. Place ribs on grill, bone side down. Lightly coat the meat side with BBQ/espresso sauce. Close BBQ lid and cook for about 15 minutes. Brush with more sauce as needed. Turn ribs, grilling meat-side-down for about 5 minutes, just to lightly caramelize the sauce. Spritz with left-over beer if needed to prevent them from catching fire.
Serves 2 to 4, depending on your appetite and how many side dishes you offer. July/August 2006
