with Breakfast in the Villages of Mt Hood

mt hood diningWhether your day starts with a solid meal or a hot beverage and a muffin, you can find a breakfast to suit your taste in The Villages of Mt. Hood.  Can’t start your day without coffee?  Head to Java the Hut for K&F espresso and free wi-fi while you sip.  Bagel sandwiches are ready when your appetite awakes.  If you’re getting ready for an early round of golf, The Scottish Shoppe at The Resort on the Mountain serves K&F also, as well as a selection of breakfast pastries.  Swing by after golf for a McTavish cookie.  

Mt. Hood Roasters’ coffee is roasted in Rhododendron daily and served in Welches at the The Roasters Restaurant where you will find beer doughnuts made with local microbrew in the batter.  You say you’re starving?  Not after breakfast from Mt. Hood Roasters’ restaurant menu where you can get – but can you finish? – four-egg omelets.  Sip on a bottomless cup of Mt Hood Roasters coffee for just $1.25.  If you’re not in an omelet mood try the #5, the Zigzag River Falls: two biscuits and hashbrowns smothered in sausage gravy and two eggs on top.  If you are in a hurry to get on with your day, the drive-through is perfect for your morning brew.

What if you want to start your morning with a tasty meal and some new flavors?  If it’s Saturday or Sunday from 7 to 12, head over to the ZigZag Inn for the chili cheese omelet, along with the Jimmy the Greek omelet stuffed with spinach, onions and feta.  At the Whistle Stop there’s cinnamon apple French toast and blueberry pancakes.

Over at The Territory Restaurant the brisk spring mornings may make you hungry for their popular Farmers Omelet, full of bacon, sausage, ham, and cheddar cheese, topped with country gravy.  Another Territory favorite is their Country Scramble, a fresh biscuit with scrambled eggs, a sausage patty, and more country gravy.

For a spicy start to your day, try The Shack’s breakfast burrito with homemade salsa, or if it’s classic comfort food you want, go for their chicken fried steak.  You can get chicken fried steak at the Wildwood Café too, as well as steak and eggs, eggs Benedict, oatmeal, omelets and pancakes – great for when you’ve got a group that’s hungry and want something for everyone.

The Highlands Restaurant at The Resort on the Mountain offers gourmet fare with their Hoodland Forest Omelet with wild mushrooms, boursin cheese, and spinach, hazelnut french toast, and the great classic, bagel’n’smoked salmon lox plate.

diningFor unique breakfast fare, try the Still Creek Inn, where fresh local ingredients in season rotate through the menu.  Specialty items on the menu include Dungeness crab cake eggs benedict topped with homemade Hollandaise sauce and huckleberry pancakes.  A favorite is the crab, wild mushroom and brie omelet.  Breakfast is served with Tully’s coffee or for those special gatherings try a mimosa or bloody mary.  Don’t forget the special plated Easter and Mother’s Day Brunches.
           

Until your next breakfast in the Villages of Mt Hood, here's a flavorful Pacific Northwest recipe you can make at home.

Smoked Salmon Scramble
4 ounces smoked salmon
8 large eggs
4 ounces cream cheese, at room temperature
2 tablespoons chopped fresh dill
2 tablespoons unsalted butter
freshly ground white pepper, to taste

Directions:
Break up salmon into bite-sized pieces.  In a medium bowl whisk eggs until light and frothy.  In a small bowl mash cream cheese and dill together with a wooden spoon.  In a large, nonstick sauté pan melt butter over medium heat.  Add eggs.  While eggs are still soft and wet, stir in smoked salmon, cream cheese, and fresh ground white pepper.  Using a rubber spatula, pull eggs that are cooked on the edges to the center of the pan and gently shake the pan to redistribute the scrambled eggs evenly over the cooking surface.  Continue to cook, moving the eggs from the side to the center of the pan every few minutes, until eggs reach the desired consistency.
Serve immediately.
