Springtime Dining in the Villages of Mt Hood

What we find enjoyable for a premium dining experience is as unique to each of us as our own taste buds. We all have our own preferences, from the menu to the feel of the tablecloth. And though these variables differ from one to another, getting things just right is what we all strive for.

Venture into the Villages of Mt Hood for distinct and charming dining options.  From cocktail hour to luscious desserts, everything tastes better when the surroundings include fresh mountain air in a relaxing atmosphere.

If your fare is fine dining, consider trying the brand new Altitude Restaurant at The Resort at The Mountain in Welches.  This “non-stuffy upscale casual dining experience” is the freshest cuisine to emerge in the Villages.

Enjoy a more relaxed atmosphere at The Still Creek Inn.  Chef owned and operated, the Northwest style menu and romantic fireplace might offer the classic comfort you’re looking for.

Don’t forget that a gift certificate will help you give your favorite couple a magnificent night out as part of their wedding present or anniversary gift.

Dining By Fireplace

Nestle into your own kitchen in a rental cabin — pour yourselves a glass of wine and share the task of cooking your meal together.  If you’re trying to impress that special someone with a delicious homemade meal, try the recipe below.  With a name like “You won’t be single for long,” I think you’ll be clinking wine glasses in no time.

Maybe your cuisine doesn’t take place at a traditional table?  For the more adventurous, ditch the crowds and try a late afternoon hike, or moonlit snowshoe.  Given your effort and the surrounding scene, that insulated container with a pasta dish ordered to-go from a restaurant in the area.

Regardless of your style, you’ll feel the rejuvenating crispness of spring in the air and experience the friendliness of Cascade service in the Villages of Mt Hood.  Check out other great dining options in our Dining section to find the perfect eatery for you and your family.  And when your bellies are full and your hearts content, watch the stars come out from your room as you rest up for a refreshing day in the Villages of Mt Hood.

RECIPE FOR RELAXATION

“You Won’t Be Single For Long Vodka Cream Pasta”  Recipe courtesy of Rachael Ray
Yields 4 servings, 20 min cook time, easy

Ingredients
1 tablespoon extra-virgin olive oil, once around the pan in a slow stream
1 tablespoon butter
2 cloves garlic, minced
2 shallots, minced
1 cup vodka
1 cup chicken stock
1 can crushed tomatoes (32 ounces)
Coarse salt and pepper
16 ounces pasta, such as penne rigate
1/2 cup heavy cream
20 leaves fresh basil, shredded or torn

Crusty bread, for passing (* Try adding cooked shrimp and sliced fresh mushrooms too) Directions
Heat a large skillet over moderate heat. Add oil, butter, garlic, and shallots. Gently sauté shallots for 3 to 5 minutes to develop their sweetness. Add vodka to the pan, 3 turns around the pan in a steady stream will equal about 1 cup. Reduce vodka by half; this will take 2 or 3 minutes. Add chicken stock, tomatoes. Bring sauce to a bubble and reduce heat to simmer. Season with salt and pepper.

While sauce simmers, cook pasta in salted boiling water until cooked to al dente (with a bite to it). While pasta cooks, prepare your salad or other side dishes.

Stir cream into sauce. When sauce returns to a bubble, remove it from heat. Drain pasta. Toss hot pasta with sauce and basil leaves. Pass pasta with crusty bread.
